200gSweet potato

100gBroccoli
approximately 4-5 nice florets
20mlOlive oil
divided between the potatoes/vegetables and the salmon
½ teaspoonGarlic powder
3 slicesLemon
thin, plus a little juice for drizzling

freshly ground, to taste

Optional herbs, or fresh parsley for sprinkling
Instructions
Step 1
Oven preparation: Preheat the oven to 200°C. Prepare a baking sheet and line it with parchment paper.
Step 2
Sweet potatoes: Peel the sweet potatoes (or simply wash them thoroughly if the skin is thin) and cut them into small cubes (approximately 2 x 2 cm so they cook quickly).
Step 3
Vegetables on the tray: Arrange the broccoli florets and sweet potato cubes on the baking sheet. Drizzle with 1 tablespoon of olive oil, sprinkle with garlic powder and salt, and toss to coat. Roast in the oven for 10 minutes.
Step 4
Adding the salmon: After 10 minutes, remove the baking sheet from the oven. Place the salmon fillet next to the vegetables. Season with salt and pepper, drizzle with a little lemon juice, place lemon slices on top, and lightly drizzle with the remaining olive oil.
Step 5
Finishing the bake: Return the baking sheet to the oven and roast for another 10 to 12 minutes (depending on the thickness of the salmon) until the sweet potatoes are completely tender and the salmon is a delicate pink and juicy.
