Instructions
Step 1
Cut the butter into cubes and place it in a food processor with the flour, cocoa powder, sugar, and salt. Pulse until the mixture resembles fine breadcrumbs. Add the water and quickly process until a dough forms.
Step 2
Roll out the dough into a circle approximately 3 mm thick. Press the dough into a 22 cm tart pan, trimming the edges if necessary. Prick the bottom all over with a fork. Freeze the pastry shell for approximately 20 minutes. Meanwhile, preheat the oven to 200°C (390°F).
Step 3
Lightly beat the egg and brush it over the chilled pastry shell. Bake on the middle rack for approximately 20 minutes. Remove from the oven and allow to cool completely.
Step 4
Prepare the raspberry compote. Soak the gelatin sheets in cold water for approximately 10 minutes. Combine the frozen raspberries, lemon juice, granulated sugar, and vanilla sugar in a saucepan over medium-high heat. Once the raspberries have thawed, mash them gently. Lift the softened gelatin sheets from the water, squeeze out the excess liquid, and stir them into the warm raspberry mixture until completely dissolved. Allow the compote to cool to approximately 40°C (104°F). Pour it into the cooled pastry shell and place the tart in the freezer until the raspberry layer has set.
Step 5
Prepare the chocolate mousse. Lightly whip the cream until softly thickened, then refrigerate. Combine the sugar, water, whole egg, and egg yolks in the stainless steel bowl of a stand mixer. Place the bowl over a bain-marie (water bath) and whisk continuously until the mixture reaches 82°C (180°F). Transfer the bowl to the stand mixer and whip until the mixture becomes light, fluffy, and cool.
Step 6
Finely chop the dark chocolate and melt it over a bain-marie until it reaches approximately 55°C (131°F). Gently fold half of the chilled whipped cream into the melted chocolate, stirring until completely smooth and glossy. Using a spatula, gradually fold the chocolate mixture and the remaining whipped cream into the fluffy egg mixture, alternating between them in small additions until fully combined.
Step 7
Pour the chocolate mousse over the set raspberry compote in the tart shell. Smooth the surface and refrigerate for approximately 4 hours, or until the mousse has completely set.
Step 8
Decorate the tart by shaving the dark chocolate over the surface using a cheese slicer or vegetable peeler. Arrange fresh raspberries on top and, if desired, finish with a decorative chocolate spiral.
Step 9
To make the optional chocolate spiral, spread melted chocolate, preferably tempered, onto a 20–25 cm long strip of food-safe acetate plastic. Smooth the chocolate with a scraper. Twist the strip with the chocolate facing inward and place it inside a tall glass, or secure each end with a weight on a tray to maintain the spiral shape. Refrigerate until the chocolate has set completely, then carefully peel away the plastic to reveal the finished chocolate spiral.
