Instructions
Step 1

Slow cook the BBQ chicken. Combine the spice rub and coat the chicken breasts. Mix the BBQ sauce ingredients in the slow cooker, add the chicken and turn to coat. Cook on low for approximately 6–7 hours or high for around 3 hours, checking for an internal temperature of 74°C. Shred with two forks and stir back into the sauce. Add a splash of water if the sauce becomes too thick.
Step 2

Roast the sweet potatoes. About 35 minutes before serving, preheat the oven to 200°C. Cut the sweet potatoes into bite-sized cubes, toss with olive oil, smoked paprika, salt and pepper. Roast for 25–35 minutes, turning halfway, until golden and soft inside.
Step 3

Prepare the crunchy slaw. Combine shredded cabbage, grated carrot and diced cucumber. Toss with the lemon or lime juice and olive oil. Season lightly. Keep the dressing simple so the tanginess cuts through the rich, smoky BBQ sauce.
Step 4

Assemble your dinner. Divide baby spinach, roasted sweet potatoes, warmed black beans and crunchy slaw between two bowls. Spoon the hot BBQ chicken over the top. Finish with sliced avocado and a little extra BBQ sauce from the slow cooker.
