Instructions

Step 1
1. Prepare the ingredients - Cut the chicken into bite-sized pieces. Slice the pepper and onion, and finely chop the garlic.
Step 2
2. Cook the chicken- Heat the oil in a large frying pan over medium-high heat. Add the chicken and cook for around 4–6 minutes, stirring until the outside is lightly golden.
Step 3
3. Fry the curry paste - Add the onion and garlic and cook for 2 minutes. Stir in the green curry paste and fry for another 30–60 seconds to release its aroma.
Step 4
4. Add the coconut milk - Pour in the coconut milk and add the sliced pepper. Stir everything together, bring to a gentle simmer and cook for 8–12 minutes, until the chicken is fully cooked through.
Step 5
5. Taste and serve. Add the soy sauce and optional sugar or honey. Finish with a squeeze of lime or lemon juice. Serve with freshly cooked rice.
Step 6
Tips to make it taste better - Don't add too much curry paste at first. Start with 1 tablespoon for 2 servings if you prefer a milder curry, then add more to taste. Use full-fat coconut milk for a richer, creamier sauce. Balance the flavours. If it's too spicy, add coconut milk; if it's too rich, add lime juice; if it tastes a little flat, add a touch more salt or soy sauce. Add vegetables. Frozen peas, broccoli, carrots or green beans all work well.Make it cheaper. Chicken thighs are often cheaper and stay juicy. Frozen vegetables also work perfectly.
