Brown Sugar & Vanilla Cupcakes
7 steps
Prep:25minCook:20min
A light and fluffy brown sugar and vanilla cupcake. It is super simple to make, tastes delicious and is the personal basic sponge recipe as the weather starts to get colder and the flavours become a little bit warmer.

Instructions
Step 1
Preheat oven to 180*c/350*f/Gas Mark 4/160*c Fan Oven.
Step 2
Line a cupcake tin with cases and set aside.
Step 3
Place the margarine, sugar, egg, milk, self-raising flour and vanilla extract into a bowl and using an electric mixer beat together until well combined and spoon the mixture into your prepared tin.
Step 4
Cook for 16 to 20 minutes, until golden brown and light and fluffy. You can tell the cakes are ready when they spring back when lightly pressed. You could also insert a skewer into the middle of one of the cakes and if it comes out clean, then the cakes are ready.
Step 5
Once ready, remove from the oven.
Step 6
Allow the cakes to sit in the tin for roughly 5 minutes, then place on a wired rack to cool.
Step 7
Whilst waiting for the cakes to cool, start to make your topping/frosting of choice.
