Instructions

Step 1
Mix the mascarpone and icing sugar in a bowl

Crush up ginger biscuits in a separate bowl
Step 3
Squeeze lemon juice into a little bowl
Step 4
Pour lemon juice into bowl of mascarpone till desired taste
Step 5
Now you can assemble. Split the ginger biscuits into ramekins and crumble at the bottom, dollop the mascarpone mix on top of the biscuits and smooth out.
Step 6
If you wish you can sprinkle an extra bit of crumbled biscuit on top.
