3 cupsvegetable stock
or water or chicken broth

2cans full fat coconut milk

1 cupSweet Potatoes
diced

1 poundfirm Tofu

0.5yellow Onion
small, chopped saute

1 cupshitake mushrooms
sliced

¼ teaspoonsea salt

1 teaspoonCane sugar
or coconut sugar

1 teaspoonground Galangal
or Ginger

1Lime zest
or 2 tablespoons fresh lime juice

3cloves garlic
minced

1lemongrass stalk
pounded with the side of a knife and cut into 2-inch long pieces or use lemongrass tea

1 cupshredded carrots

2 teaspoonsred curry paste

1 teaspoonfish sauce

2 tablespoonssunflower oil

¼ teaspooncayenne pepper

½ teaspoonpepper

2green onions
thinly sliced

lime wedges

Instructions
Step 1
In a dutch oven or large pot, heat oil over medium high heat. Add onion, garlic, mushrooms and sweet potatoes. Sauté for 3-5 minutes.
Step 2
Add carrots, ginger, sugar, cayenne pepper, salt, pepper, lime zest, vegetable stock and coconut milk. Bring to a boil then simmer for 15-20 minutes. Taste and adjust seasonings as needed.
Step 3
Serve with lime wedges and top green onions and enjoy!
