4 cupsvegetable broth
1can coconut milk
15 slicesginger
1garlic clove
bashed
1 stalklemongrass
bashed
4kaffir lime leaves
torn
1red chillies
chopped
2 cupstofu
cubed
1 cupsshiitake mushrooms
2 Tbspfish sauce
1 tspbrown sugar
salt
to taste
1 cupcoriander leaves
1 cupscallions
sliced
1 ½ Tbsplime juice
1 cupvermicelli noodles

Instructions
Step 1
Add vegetable broth to a pan then bring it to a simmer and add the coconut milk

Step 2
Add the lemongrass ginger garlic chili lime leaves fish sauce and brown sugar salt to taste and bring to a simmer for a few minutes
Step 3
Add the tofu and mushrooms and cook for another 7 or 8 minutes then add the noodles at the end and cook two minutes or according to pack . Add lime
Juice to taste and serve with coriander and scallions
