Graham Cracker Crust
1 ½ cgraham cracker crumbs
2 Tbssugar
½ tspkosher salt
¼ tspnutmeg
freshly grated
6 TbsUnsalted butter
melted

Graham Cracker Crust
Step 1
Preheat the oven to 350°F
OvenPreheat
Step 2
Spray a 2 in. deep, 9 in. round springform pan with cooking spray
Step 3
Wrap the bottom and side of the pan with 2 layers of foil
Step 4
In a bowl toss together the graham cracker crumbs, suagr, salt, and nutmeg
Step 5
Slowly drizzle in the butter, tossing it through the crumbs until its the consistency of wet sand
Step 6
Pour graham cracker crust into the pan and evenly spread and press in
Step 7
Bake crust for 10 minutes (will look the same)
Step 8
Let cool for 10 minutes
Filling
Step 9
Reduce temperature of oven to 300°F

Boil some water and place a large roasting pan into the oven

Cream together the cream cheese and sugar together
Step 12
Add flour, lemon juice and zest, vanilla, and salt

While mixing add eggs and yolks one at a time, the the sour cream
Step 14
Pour mixture over the crust
Step 15
Place cake in the roasting pan and carefully add boiling water to come about 1 inch on the side of the pan

Bake the cake for 60 to 70 minutes, until the cake is set but a little jiggly in the middle

Turn off the oven and prop open and let cake cool for about 1 hour
Step 18
Refrigerate several hour before serving
