Chocolate Cashew Bars. Meet my new addiction. These cashew bars were taste tested by almost a dozen people, all absolutely fell in love with them! The star ingredient,
Maple Roasted Cashews. They're made in small batches at their solar powered bakery and add the perfect crunch to this delicious dessert bar. Plus while you're baking you have a great snack!
Ingredients for Crust
1 3/4 cups 1.1 GF flour
1 egg
1 tsp vanilla extract
12 tbsp butter, I used a DF
1/2 tsp kosher salt
1 1/2 tsp baking powder
1/4 cup of sugar
1/2 cup brown sugar
Preheat the oven to 375 degrees and spray a 8x8 baking pan with baking spray. Add all of the ingredients together in a bowl and mix until just incorporated. Press into the bottom of the pan. Bake for 25-30 minutes or until lightly golden brown.
-Sprinkle 1 1/2 cups Grandy Organics Maple Roasted Cashews on the crust, follow the next step for filling.
Ingredients for cashew filling
1 cup of brown sugar
1 tsp vanilla extract
4 tbsp butter, I used a DF butter
15oz can of coconut cream, just the hard cream portion
Add the sugar, butter, vanilla and coconut cream (just the hard portion), and salt to a stock pot. Place over medium heat and bring to a low boil for 5 minutes. Pour over the cashew/crust and bake for 15 mins. Remove, let come to room temp, then place in the fridge for 4 hrs min before cutting.
*Melt 1 cup of semi-sweet chocolate chips either in a microwave or double boiler. Once melted, drizzle on top of the bars. Optional: top with a little fleur de sel. Enjoy!
