Theese were one of my mother’s favorote cookies ans being back some winderful memories.

Ingredients

1 cupbutter
softened
½ cupgranulated sugar
1 cupbrown sugar
packed
¼ cupcoconut butter
softened, or 1/2 finely shredded coconut
1 teaspoonvanilla extract
2eggs
large, slightly beaten
2 ¼ cupsall-purpose flour
1 teaspoonbaking soda
1 teaspoonsalt
½ cupold fashioned rolled oats
1 cupCorn flakes cereal
½ tspcinnamon
1 cupsemi-sweet chocolate chips
½ cuppeanut butter chips
½ cupbutterscotch chips
½ cupchopped walnuts
1 cuppotato chips

Instructions
Step 1
Preheat the oven to 375° F.
Step 2
Beat butter, in a large mixing bowl, until light and creamy. Scrape down sides of the bowl. Add the granulated sugar, and brown sugar. Beat until creamy and color has lightened. Scrape down sides of the bowl. Add the coconut butter, and vanilla extract and beat until fully incorporated. Add eggs, and beat until completely mixed.
Step 3
Add the flour, baking soda, salt, oats, corn flakes, and cinnamon. Mix just until all dry ingredients are mixed in. Stir in chocolate, peanut butter, and butterscotch chips, walnuts, and potato chips. Scoop two tablespoons per cookie onto ungreased baking sheets.
Step 4
Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
Step 5
Makes about 3 1/2 dozen cookies.
