Pickled pea purée
(Also a minted pea purée just take the vinegar out and add fresh mint) I made this to see how a purée would hold up against vinegar and it makes a delicious alternative to mushy peas.

Instructions
Step 1
Cook your peas thoroughly in only a little water, we need to keep all the flavour in.
Step 2
Add butter and cream and add to a blender blitzing for a good minute or so.
Step 3
Pass through a sieve and reduce a bit.
Step 4
Put back into a blender with whatever accompaniment you’d like.
