Mom's Steamed Spare Ribs

A dim sum classic that is one of my mom's signature dishes. Supremely juicy and flavorful. Perfect with rice or just on its own.

cut between the bones
1 Tbspcorn starch
for rinsing, optional
1thai chilli
thinly sliced
1scallion
thinly sliced
1 tspsesame oil

Instructions
Step 1
(Optional) Massage ribs with corn starch, rinse with cold water, and pat dry. This will get rid of the "porky" aroma.

Soak fermented and dried black beans (douchi) in room temperature water for 10 minutes to rehydrate.

In a heat-proof high-walled plate (coupe), combine salt, sugar, corn starch, soy sauce, oyster sauce, white pepper, baking soda, and garlic.

Step 4
Add rehydrated black beans to the marinade and combine with spare ribs, marinating for at least an hour (preferably overnight).
Step 5
Get a steamer ready on medium heat.
Step 6
Sprinkle finely chopped thai chillies around the spare ribs and drizzle with sesame oil.

Steam for 25 minutes until the ribs are fully cooked.
Step 8
Garnish with scallions and enjoy with some rice!
