Instructions

Step 1
Preheat oven to 350 degrees F.
Step 2
Arrange chopped vegetables in the bottom of the large roasting pan.
Step 3
Place chicken in roasting pan, and season generously inside and out with salt, pepper and onion powder.
Step 4
Arrange dollops of butter around the chickens exterior. (Optional: Pull skin away from meat and add butter under skin).
Step 5
Cut celery into 3-4 large pieces and place in chicken cavity.
Step 6
Bake uncovered 1 hour and 55 minutes in the preheated oven, to a minimum internal temperature of 180 degrees F (82 degrees C).
Step 7
Remove from oven, cover with aluminum foil, and allow to rest about 20 minutes before serving.
