Jamaican pork burger with grilled pineapple (low sodium)

This burger is full of delicious Caribbean flavours and topped with a grilled pineapple. The recipe easily accommodates those with salt and those following a salt free diet. See the instructions below. Not so much low carb, but no added sugar, and still a healthy dinner!

Instructions

Step 1
Pre-heat the oven to 220 C.
Step 2
Cut the potatoes into wedges (8 wedges per potato). Drizzle olive oil and generously season with salt free lemon pepper seasoning. Toss and spread them on a baking paper lined tray. Bake for about 20-25minutes or until browned.
Step 3
In the meantime, add the pork, eggs, breadcrumbs and Jamaican seasoning to a bowl and mix well. Shape into 4 patties. Optional: if there are those who can eat salt, shape the salt free patties first, and then season the remaining mince with a little salt.
Step 4
Heat a drizzle of oil in a frying pan on high heat, and cook the patties 5-7 minutes each side until cooked through.
Step 5
In a small bowl, mix the mayo and bbq sauce.
Step 6
Slice the buns in half, and divide the slaw on each bottom half of the bun. Top with a tbsp sauce.
Step 7
When the patties are done place them on the slaw. Return the pan to high heat and cook the pineapple slices until browned on each side.
Step 8
Place the pineapple slices on the patties and add the top half of the bun.
Step 9
Serve with the wedges. Optional for those who can eat salt: add salt shaker and tomato sauce on table for the wedges.
