Instructions

Step 1
Set oven to 280°F fan.
Step 2
Add caster sugar gradually to the egg whites on medium speed, then set to second highest speed to form super stiff meringue.
Step 3
Sift in almond flour and powdered sugar together.
Step 4
Macaronage until desired texture is achieved. Add food colouring if wanted.
Step 5
Pipe desired shapes.
Step 6
Rest until no longer sticky to the touch, 10-15 minutes.
Step 7
Lower oven temperature to 265°F fan. Bake 15-20 minutes.
Step 8
Oven shower for 3 minutes.
