Instructions

Step 1
Preheat the oven to 350 degrees F.

Season the chicken strips with salt and pepper.

Heat an ovenproof skillet over medium-high heat, and add the avocado oil. When the oil is hot (you should see some smoke), add the strips, flesh side down. Sear the chicken for 2 to 3 minutes, until golden brown, then flip them and transfer the pan to the preheated oven. Depending on the thickness of the strips, roasting should take on 5 to 8 minutes.

Meanwhile, in a large bowl combine all the ingredients for the salad. In a small bowl, whisk together the olive oil, lemon juice, and crushed lavender buds, then pour about three-quarters of the mixture over the salad. Gently toss everything to combine, then season the salad with a little sea salt.
Step 5
Remove the chicken from the oven and divide the strips between two serving plates. Add half of the salad to each plate, then drizzle the remaining quarter of the vinaigrette over the chicken around the plate. Garnish each serving the edible flowers.
