Ingredients

1 poundlean ground beef
1onion
small, chopped
3potatoes
medium, cut into 1/2-inch pieces
3 cupschicken broth
1 ½ cupswhole milk
2carrots
medium, shredded
1stalk celery
finely chopped
1 tablespoondried parsley flakes
½ teaspoonsalt
¼ teaspoonpepper
8 ouncesshredded cheddar cheese
¼ cupsour cream
fresh parsley
chopped, optional
Instructions
Step 1
In a large skillet, cook beef and onion over medium heat until beef is no longer pink, 6 to 8 minutes. Drain. Transfer to a 5-quart slow cooker.
Step 2
Add potatoes, broth, milk, carrots, celery and seasonings. Cook, covered, on low until vegetables are tender, about 7 to 8 hours.
Step 3
Stir in cheese until melted. Stir in sour cream. If desired, sprinkle with parsley. Makes 10 cups.
