Combine flour and salt

Add in all the butter, mixing by hand until you get a sand like consistency

Add in ice water, mix by hand until dough like consistency, cover and put in fridge to chill

Roast one head of garlic

Dice potatoes and onion

Cook onions in a large pot with olive oil, with the salt, pepper, coriander, paprika, basil, oregano, and bay leafs. Cook until onion is translucent.

Deglaze with a shot of whiskey

Add in ground chicken, cook fully

Add in between 1/3 and 1/2 cup of flour, depending on amount of grease. I added 1/3 cup. Stir to combine.

Add in 4 cups of chicken broth, potatoes, fresh thyme, roasted garlic, and Worcestershire.

Put on a lid, and simmer until potatoes are fully cooked. Remove bay leafs and thyme sprigs when done.
Assembly

Roll out about a handful of dough at a time, as thin as possible. Using a bowl, cut out a circle.

Add filing to the center of your circle of dough.

Fold the dough in half, and crimp the edges shut.

Cut a small X in the top, and brush with egg wash.

Bake at 350 degrees Fahrenheit until golden brown.
