Instructions

Step 1
Toss the zucchini in the salt and pepper and cook on the grill or in a grill pan over medium heat until just tender but still slightly crispy (about 2-3 minutes per side) before topping with cheese and cooking until it melts(about 1-2 minutes).

2. Serve the cheesy grilled zucchini topped with the tomato, onions, jalapeno, avocado, cilantro, sour cream and lime juice.

🍀 I add 5.25 oz of cooked fish from the leanest category. Shrimp is my favorite!

*If you don’t like to grill, do them in the oven.

β€’Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.

β€’In a small bowl, 1/2 tsp. taco seasoning or the salt and pepper

β€’Lay zucchini coins on the baking sheet, and sprinkle with salt seasoning
Step 8
β€’Bake until slightly tender, about 10 minutes, flipping halfway through.
Step 9
β€’Move zucchini coins to the center of the sheet, top with cheese.
Step 10
β€’Bake until cheese has melted, about 3 minutes.
Step 11
β€’Add remaining toppings.
Step 12
Divide into 4 servings.
