Ingredients
4 servings
4zucchini
medium, cut into 1/4 inch discs
ΒΌ tspsalt
Β½ tsppepper
or taco seasoning, is great as well!
2 Tbsphot sauce
1 cupcheese
shredded
1 cuptomato
diced
ΒΌ cupgreen onions
or red
1jalapeno
finely diced, optional
1avocado
diced
ΒΌ cupcilantro
chopped
1 tablespoonsour cream
may also use plain Greek yogurt
2 tablespoonslime juice
5.25 ozshrimp
add this for protein
Instructions
Step 1
Toss the zucchini in the salt and pepper and cook on the grill or in a grill pan over medium heat until just tender but still slightly crispy (about 2-3 minutes per side) before topping with cheese and cooking until it melts(about 1-2 minutes).
Step 2
2. Serve the cheesy grilled zucchini topped with the tomato, onions, jalapeno, avocado, cilantro, sour cream and lime juice.

π€ I add 5.25 oz of cooked fish from the leanest category. Shrimp is my favorite!

*If you donβt like to grill, do them in the oven.
Step 5
β’Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.
Step 6
β’In a small bowl, 1/2 tsp. taco seasoning or the salt and pepper
Step 7
β’Lay zucchini coins on the baking sheet, and sprinkle with salt seasoning
Step 8
β’Bake until slightly tender, about 10 minutes, flipping halfway through.
Step 9
β’Move zucchini coins to the center of the sheet, top with cheese.
Step 10
β’Bake until cheese has melted, about 3 minutes.
Step 11
β’Add remaining toppings.
Step 12
Divide into 4 servings.
