Linzer Cookies are traditional Austrian Cookies and a very popular Holiday Treat. You can make them with any jam you like.

Instructions

Step 1
Cut 200 g (7.2 oz) Unsalted Butter into small pieces and put it in a freezer for about 5 minutes.
Step 2
In a bowl combine All-Purpose Flour, Almond Flour, Confectioner's Sugar, Zest from 1 Lemon, 1 tsp Cinnamon Powder, 1/2 tsp Baking Powder and a pinch of Salt.
Step 3
Now, add Butter Pieces and 1 Egg. Use a Food Processor with a blade to achieve a sandy texture.
Step 4
Form a few balls from the Dough, wrap them, and put into the fridge for 2 hours.
Step 5
Preheat oven to 350 F (175C).
Step 6
Take the Dough from the fridge and roll it to a thickness of 3mm. It is better to roll the Dough between 2 Baking Sheets
Step 7
If the Dough becomes soft, put it in the freezer for ~3 minutes before cutting. Use any cookie cutter you prefer.
Step 8
The Cookies are assembled as a sandwich from 2 pieces. Cut a circle in the middle of the top pieces.
Step 9
Place cookies on the baking pan covered with parchment paper.
Step 10
Put the Cookies in the freezer before baking them for about 2 minutes. It will prevent deformations.
Step 11
Bake Cookies for 7-8 minutes (they will be light in color) at 350 F (175C).
Step 12
Remove from the baking sheet and place on a straight surface.
Step 13
Cool them completely before filling. Sprinkle the tops of the Cookies with Powdered Sugar.
Step 14
Spread 1 teaspoon of jam (put more in the middle) on each cookie bottom. Cover with a top piece.
Step 15
