Step 1
1. Turn instant pot on to sauté (high on my IP).
Step 2
When IP says hot, add EVOO and onions. Season with ½ tsp. salt and sauté until soft, stirring often
Step 3
Add garlic and sauté an additional 30 seconds.

2. While onions sauté - in a separate bowl, whisk chicken base into hot water.
Step 5
3. Settle ham hock(s) into pot. Add diced ham and dry black-eyed peas to IP and pour chicken base/water into the IP. Drop a clean penny into pot (if desired) and stir well.
Step 6
4. Cover pot and set to Manual/High Pressure for 30 minutes. Allow natural pressure release for 15 minutes then manual release until pin drops.
Step 7
5. Remove ham hocks from pot, remove any usable ham and put it back into the pot.
Step 8
6. Season with salt and pepper to taste.
