CHICKEN SATAY SKEWERS

This is one of my favourite things to make for a dinner party starter but it's also perfect for a low-carb lunch boxed up and taken to work with a green salad. If you don't have skewers, don't worry, just lay your chicken strips out on a baking tray.

Instructions

Step 1
Preheat your grill to maximum.
Step 2
Finely chop one of the garlic cloves. Place the chicken strips in a bowl and add the chopped garlic and 1 tablespoon of the light soy sauce. Mix the ingredients together. Thread the chicken onto skewers, making sure not to pack them too tightly otherwise they won't cook. Place the skewered chicken on the grill pan or a baking tray and slide under the grill. Cook the chicken for about 5 minutes on each side or until it is fully cooked through. Check by slicing into one of the larger pieces to make sure the meat is white all the way through, with no raw pink bits left.
Step 3
While the chicken is cooking, place the remaining garlic cloves and soy sauce in a blender along with the lemongrass, fish sauce, ginger, chilli, peanut butter, spring onions, a little drizzle of honey and a splash of warm water. Blitz until just smooth.
Step 4
Serve up your chicken skewers smothered in the delicious satay sauce, topped with coriander sprigs, if using, and with lime wedges to squeeze over.

Top Tip

Step 5
Here's a little tip for you. Soak your wooden skewers in cold water for 10 minutes before you load up the chicken and stick them under the grill. This stops the wood from burning and you having a fire on your hands!
