Pour your milk into a bowl.

Place your milk in a microwave and heat it up until it’s just below boiling, this takes 2-3 min for me.

Add the lemon juice and stir gently, It will form ricotta right before your eyes.

allow to cool down, then strain.

Season with lemon zest, salt and a touch of pepper.

Spread it over toast, maybe a dash more lemon and olive oil and it’s absolutely delicious.
