Instructions
Step 1
In a medium bowl, whisk together the egg and stevia until light and fluffy. Whisk in the milk and vanilla extract then sift in the flour and baking powder. Whisk until well combined. Let the batter rest for a few minutes.
Step 2
In the meantime, in a small bowl, make the cinnamon-sugar drizzle by mixing together the milk, 0 calorie brown sugar and ground cinnamon until well combined. Set aside.
Step 3
In another small bowl, whisk together the cream cheese and 0 calorie icing sugar until smooth. Set aside.
Step 4
Pour 1/4 cup scoop of batter onto a hot, non-stick pan, swirl in the cinnamon-sugar drizzle and cook over medium heat until bubbles form on the surface then flip over, about 1-2 minutes. Cook the other side for an additional 1-2 minutes. Repeat this until all of the batter is used up. I recommend using a non-stick pan so you don’t need to use any oil/butter for the pan.
Step 5
Top the pancakes with the cream cheese frosting and enjoy!
