Instructions
Step 1
Preheat pan to medium hot
Step 2
Make toast
Step 3
Whisk 2 eggs (with salt, pepper, hot sauce as desired) and have a handful of cheese immediately to hand, put toast on plate
Step 4
Put a very light coating of oil on the pan
Step 5
Pour thin layer of eggs on the bottom of the skillet, swirling to coast, if necessary
Step 6
Sprinkle cheese in center and immediately roll edges of omelette to the center of the pan
Step 7
Slide egg on to plated toast. Eat!
