Instructions

Step 1
In a small mixing bowl, add your almond flour, coconut sugar, salt, and baking soda. Use a whisk or fork to blend until fully combined.
Step 2
Next, add your lemon zest, lemon juice, coconut oil, egg and vanilla to a larger mixing bowl. Blend until fully combined.
Step 3
Slowly start to add the dry mix into the wet mixture. Blend fully.
Step 4
Cover the mixture and place in fridge for 90 minutes. **Don't skip this step!!
Step 5
Remove from fridge and roll dough into one inch balls. It should make 12 medium sized cookies.
Step 6
Line up dough balls on baking sheet with space between. Gently press down dough into round cookies about 1/4in thick.
Step 7
Bake at 325 for 10-12 minutes. Top should have small cracks and bottom should be golden. Remove from oven and let sit on baking sheet 2 more minutes.
Step 8
Cool on metal racks and store in refrigerator.
