Instructions

Step 1
First you will need a pressure cooker, a silicone egg bite mold, and a rack that fits inside your pressure cooker.
Step 2
Cut bacon strips into small pieces and fry up until golden brown. Pour out onto a paper towel to drain some of the grease.
Step 3
Crack 4 eggs into a medium sized measuring cup along with salt and pepper, cottage cheese, monterrey jack, and gruyere cheese. Use an immersion blender (or dump everything into a regular blender), mix until smooth and frothy.
Step 4
Sprinkle a bit of bacon into each egg mold then fill 3/4 of the way with the egg mixture. Cover tightly with foil.
Step 5
Turn on your pressure cooker and pour in 1 and a half cups of water. Lower in the egg bites on the rack. Close and make sure the pressure knob is set to seal. On an instant pot, select manual or pressure cook and set it to 9. On any other pressure cooker, select the steam setting and cook for 9 minutes.
Step 6
Once the time is up do NOT quick release! It will cause the eggs to collapse. Wait about 10 minutes before opening the pressure cooker.
Step 7
They should pop out of the silicone mold easily, then enjoy!
