Instructions
Step 1
Preheat the oven to 200 degrees
Step 2
Cut red pepper in half and remove seeds.
Step 3
Cut tomatoes into even quarters.
Step 4
Peel onion and cut in half
Step 5
Cut garlic bulb in half lengthwise and peel shell if desired.
Step 6
Place veggies on a cooking pan and coat with olive oil, basil, oregano, thyme, red pepper flakes, salt and pepper.
Step 7
Cook in the oven for 45 mins.
Step 8
Remove veggies from the oven, carefully add to blender (remove garlic shell) and blend until smooth.
Step 9
Heat olive oil in a large pot on low-medium heat and poor in blended mixture.
Step 10
Stirring occasionally, add tomato paste, sugar, cayenne powder, basil, vegetable stock, balsamic glaze, and heavy cream.
Step 11
Serve hot with a drizzle of heavy cream and/or garlic olive oil. Garnish with parsley, parmesan, salt + pepper, and croutons.
