Roasted Tomato Soup
A pure comfort meal to honor the last ripe tomatoes of the year and celebrate the start of the cozy season! ๐

Instructions
Step 1
To a large baking tray add your tomatoes, onion, garlic and thyme. Sprinkle with oregano, season with salt and pepper and drizzle with olive oil.
Step 2
Roast in the oven at 200ยฐC for 40-50 minutes.
Step 3
Squeeze out the garlic and transfer to a blender or pot to blend. Add basil, soaked cashews (or vegan cream/coconut milk) and vegetable broth.
Step 4
Blend until smooth. If necessary heat again.
Step 5
Slice the bread, place on a baking tray, add some thyme, garlic (optional) and salt. Drizzle with olive oil, and bake for a couple of minutes until golden brown.
Step 6
Serve with some fresh basil and enjoy!
