Step 1
Preheat the oven to 180°C (355°F), 160°C fan (320°F), gas mark 5. Line 2 flat trays with baking paper.

Whisk the egg whites until they are stiff. Gently stir in the sugar, then the almonds and the almond extract.

Scoop dessertspoonful of mixture and place on the try. Put almond flakes on top. Repeat 20 times.

Place in over for 15 minutes. The tops should be lightly browned.
