Instructions

Step 1
Slice chicken into strips (to cook quicker) and sauté in olive oil until done.
Step 2
Put all remaining ingredients, except lettuce & tomatoes, with chicken in food processor and pulse about eight times, being careful not to chop too finely.
Step 3
After processing, weigh out 6 ounces of prepared chicken and fill lettuce leaves. Top with 1/2 cup tomatoes. Sprinkle with 1/2 Tbsp of Parmesan cheese.
Step 4
Feel free to adjust seasonings to taste.
