Delicious guilt-free chicken & vegetable bowl

I discovered and perfected this beautiful, simple dish when I was on a diet, trying to make something delicious yet low in calories in order to fit my daily budget. And it's pretty quick to make too! Perfect for guilt-free late-night dinners. It is also a good way of using the leftover chicken too - just slice it and throw it in with the vegetables in soy sauce, and voila!

Prepare the vegetables.

Season the chicken with garlic powder, paprika and some salt and pepper. Don't put too much salt since we will be adding soy sauce latter.

Cook the chicken fillets on some preheated cooking oil until done, or for about 15 minutes. When done cut to strips and set asside.

Now (or in parallel) take a bigger pan and start sauteing the vegetables starting from peppers, after a few minutes and carrots and broccoli, then soon after the zucchini and mushrooms. Season lightly with some salt and pepper. Be careful not to overdo it.
NOTE: You can saute it shorter or longer depending on your preference, but I like to saute it gently and leaving some more bite to it.

When the vegetable is almost done, add chicken sliced into strips and some soy (or low-sodium) sauce. mix well and adjust the taste if needed.
