Step 1
Prepare a mixture of spices with salt, pepper, and minced rosemary and sage. Add also some garlic and a coupe of spoon of olive oil.

Take the pork knight and rub the mixture of spices all over it. Use your hand insead of bruch and massage the meat.

Slice the celery, carrots, and onions roughly.

Take a large pan, pour a bit of olive oil in it. Switch on the stove and ease down the pork knuckle. After a couple of minutes, pour the white wine into the pan and let alcohol evaporate.
Keep the heat high and roast the meat for about ten minutes, turning it around a couple of times.

Move the meat and the vegetables into a baking dish. You can add some vegetables and spices if you want to.

Place the baking dish into the oven and bake the pork knuckle for about one and a half hours. During this time, remember to turn the meat around every twenty minutes and add some water if the bottom of the dish is becoming too dry.

Increase the heat of the oven and continue cooking the pork knuckle for another thirty minutes.

When the pork knuckle is ready, take it out from the baking dish and wrap it up in some foil for about ten minutes before serving.
