Slow roasted pork shoulder

Give this a go for Sunday roast. Melt in the mouth pull apart meat with amazing crackling.

Instructions

Roughly chop the carrot , onion and celery and place in the bottom of a large roasting dish.

Season the flesh of the posts with salt and pepper

Pour the stock into the bottom of the tray

Brush the crackling with oil and generously season with salt

Back into the hottest oven you have for 20-30 minutes, until all the crackling has crisped up. Keep an eye on it.
