Instructions
Step 1
To remove skin, use a small, sharp knife to cut through the skin 10cm from the top of the hock (knuckle end of the leg).
Step 2
Gently slide knife under skin to separate it from the fat; gently peel back to reveal a layer of white fat.
Step 3
Use a knife to score fat diagonally, using a criss-cross pattern at about 2 cm intervals without cutting into the meat.
Step 4
When ready to glaze, preheat oven to 180 degrees Celsius. Line a large baking dish with 2 layers of baking paper.
Step 5
Insert one clove into each 'diamond' corners where knife scores intersect.
Step 6
Mix glaze ingredients together until sugar has dissolved. Brush half the mixture onto the fat of the ham, making sure to get into the crevasses made by scoring.
Step 7
Place baking dish on lowest shelf of oven and cook for 30 minutes, removing every 10 minutes to baste ham with remaining glaze.
