Instructions
Step 1
Juice the limes and chop the cilantro to yield 2 tbsp. Chop 1 chipotle chile and reserve additional 2 tsp adobo sauce.
Step 2
Whisk lime juice, cilantro, chipotle adobo sauce and brown sugar in small bowl. Pat shrimp dry and season with 1/4 tsp salt, 1/4 tsp pepper, and white sugar.
Step 3
Heat 1 tbsp of oil in a large skillet over high heat. Add half of shrimp to pan in single layer and cook until spotty brown and pink around the edges, about 1 minute. Turn off heat, use tongs to flip each shrimp and let stand until all but the very center is opaque, about 30 seconds. Transfer to a plate and cover with foil.
Step 4
Repeat step 3 with the remaining shrimp
Step 5
after shrimp has finished cooking, return the first batch to skillet and toss to combine. Add glaze, cover, and let stand to warm through, about 1 min. Toss shrimp again to coat and serve.
