Crispy birria tacos with homemade consomé

Chuck roast
3 lbschuck roast
6 cupswater
1 headgarlic
4 Tbskosher salt
1 TbsGround black pepper
4bay leaves

Instructions
Chuck roast
Step 1
1. Using 2tbs of kosher salt & 1tbs of ground black pepper, season chuck roast on both sides

2. Cut Chuck roast into 4-5 pieces

3. Brown both sides of chuck roast in a skillet

4. Place pieces of roast into a pot/instant pot with 6-8 cups of water

5. Add half of a white onion, whole head of garlic, and 4bay leaves

6. Add additional 2 tbs of kosher salt

7. Bring meat to a boil and let simmer on medium heat for 1hr, skimming away any fat that comes to the surface of your pot.

8. if you are using an instant pot,cook on regular pressure for 50min

9. Once meat is done cooking and tender, remove from pot, (keep your water that you boiled it in) place on cutting board and shred meat. (Remove bay leaves as well and tv brown away)

10. Remove onion and whole head of garlic from your pot and set aside for your sauce

11. Add shredded meat back to your water
Consomé

1. In a separate pan heat up 2tbs of vegetable oil
Step 13
2. Place all peppers and 6 cloves of garlic in the pan, roast until fragrant.

3. Remove peppers and garlic and place into a blender

4. Add half of the boiled onion and whole head of Gallic that you set aside from the Chuck roast (squeeze the garlic and it will slide right out) to the blender

5. Add 6-8peppercorns, 5 whole cloves, and 2 cups of water, blend until sauce is smooth. Use a strainer to pour sauce into your pot with your meat (you can use some of the water from your pot to pour into the strainer to help get your sauce through the strainer) make sure to use a spatula to help push the sauce through the strainer. Dispose of any leftover pulp

6. Add your seasonings to your pot; 1tbs oregano, 1tbs thyme, 1tbs cumin, and 2-3tbs beef bouillon, add any additional seasoning for taste/flavor

7. Cover and let simmer until beef is nice and tender

1. Using a corn tortilla, dip it into your pot coating it with the consomé

2. Place coated tortillas in a hot pan or on a hot griddle

3. Place mozzarella cheese on your open faced tortilla and add your beef on top of the cheese, along with finely chopped white onions and cilantro. allow tortilla to get slightly crispy then fold tortilla over and cook on both sides until completely crispy. Repeat this step to create your tacos

4. Use a small bowl to pour consomé in for dipping
