Instructions

Step 1
Toast all the veg and garlic in a dry pan on high heat until starts to blacken and tip into a deep saucepan
Step 2
Add the stock, vinegar, salt and sugar and bring to a boil
Step 3
Toast off the Chillies on a medium heat and add to the broth pan.
Step 4
Simmer for 90 minutes
Step 5
Blend til smooth. If you want thicker, simmer it for a while longer to desired thickness. Adjust salt and vinegar levels if necessary

Whisk the flour, milk eggs and salt to combine
Step 7
Fry the chorizo style sausages for a couple of minutes to begin browning
Step 8
Heat up 2 cake tins with just enough oil to coat the bottom til very hot
Step 9
Add 3 sausages to each and pour half the Yorkshire pudding mix
Step 10
Make at 220 for 20 minutes
Step 11
Serve with the Birria gravy. Can top wjth salsa, Guac, and beans
