Instructions

Step 1
Preheat the oven to 200C

Roll out the dough and cut circles a bit bigger than your tart tins.
Step 3
Cover the tart tins with cooking spray and invert the pastry into it. Lift the edges and gently fit the pastry into the pan. Trim off edges and freeze for 15 minutes. Line with baking parchment and weights and blind bake for 15 minutes.
Step 4
Meanwhile, prepare the filling. In a large bowl whisk eggs and milk together with salt, pepper, oregano, Mediterranean mix and nutmeg.
Step 5
In a bow, pour boiling water on spinach, then drain.
Step 6
In another bowl, combine ricotta and wilted spinach and divide for 4 equal parts.
Step 7
Remove the paper and weight, spread ricotta-spinach mixture on the bottom of the crust and pour in egg/milk mixture. Bake for another 20 minutes, or until filling is firm and edges are golden brown
Step 8
Allow to cool 5-10 minutes before serving.
