Ingredients
2 servings
900gsweet potatoes
cut into fries
olive oil spray
salt
to taste
pepper
to taste
1onion
finely diced
400gminced chicken
1garlic clove
minced
1red pepper
finely diced
2 tspMexican spice mix
a mix of ground currin, paprika & chilli
1 tspsmoked paprika
60gbaby spinach leaves
½ cupwater
80gcheddar cheese
grated
80gfresh coriander
roughly chopped
Instructions
Step 1
Preheat oven to 200°C/fan 180°Clgas 6 and line a baking tray with baking paper.
Step 2
Place potatoes on tray, spray with oil and season with salt and pepper.
Step 3
Roast for 20-25 minutes until golden and crisp.
Step 4
Meanwhile, heat a large non-stick frypan over medium heat and cook onion for 5 minutes or until soft.
Step 5
Add chicken and garlic and cook, stirring occasionally for a further 3-4 minutes or until chicken is cooked.
Step 6
Add red pepper and continue to cook for a few more minutes.
Step 7
Add Mexican spice, paprika, spinach and water and cook, stirring, for a further 1-2 minutes until spinach has wilted.
Step 8
Place fries in an ovenproof serving dish, top with chicken and cheese and return to the oven for a few minutes until cheese has melted.
