Step 1
Preheat oven to 350ish. Dice all vegetables except eggplant (onion, pepper, green onion, garlic, tomato) and fry with oil.

Add basil, oregano, black pepper, and rosemary, thyme, and fennel if you have them
Step 3
Thickly slice eggplant and cut out the centers. Then dice most of the remaining eggplant centers and add to the pan
Step 4
Lay hollow eggplant slices in (ceramic) baking dish and drizzle with olive oil
Step 5
When frying is done, put veggies in a bowl and add cheeses. Clean out pan with a little water & add remnants to bowl. Optional: dice fresh mozzarella and add at this point

Fill eggplant with veggies using a tablespoon. Then top with panko breadcrumbs
Step 7
Melt butter in microwave & add garlic powder and olive oil. Drizzle garlic butter over the eggplant to meld breadcrumbs. Add more cheese on top if desired
Step 8
Put in the oven (uncovered) for about 40 minutes
