Ingredients

1 ½ cupsall-purpose flour
½ cupgranulated sugar
2 teaspoonsbaking powder
½ teaspoonsalt
1egg
½ cupmilk
¼ cupvegetable oil
¼ cupmaraschino cherries
chopped
2 Tbspmaraschino cherry juice
½ cupmini chocolate chips
½ tspalmond extract
For the glaze
Instructions
Step 1
Preheat oven to 350°
Step 2
Whisk the flour, salt and baking powder together in a bowl
Step 3
With a mixer, beat together the egg, almond extract, sugar, milk, oil, and cherry juice. Beat in the flour mixture.
Step 4
Fold in the chips and cherries.
Step 5
Spray a mini muffin tin with nonstick spray, pour about 1 tablespoon of batter in each muffin.
Step 6
Bake 12-15 minutes (check at 12 minutes)
Step 7
Meanwhile, whisk together the powdered sugar, almond extract and cherry juice. If it’s too thick add a tablespoon or 2 of milk to loosen it. If it’s too runny, add more powdered sugar a tablespoon at a time until the desired consistency is reached.
Step 8
When the muffins are baked, let cool, then pour the glaze over the top, allow to dry before eating
