Stuffed Portobello Mushrooms

This is a super fast recipe creation... my husband loves this one! ***This can easily be made vegetarian by subbing vegan field roast for the sausage.

Instructions

Step 1
Remove the stems from caps and set them aside for later. Then place caps on an oiled rack over a cookie sheet bake at 350F for 15 to 20 minutes (these will leak fluid from the mushroom cooking) set aside o cool while you make the filling.
Step 2
Mix together diced sausage, chopped scallions, and diced mushroom stems. Place 1/2 inside each mushroom cap.
Step 3
Mix together topping ingredients in a small bowl. Place half on each mushroom cap in a mound.
Step 4
Top with crunchy onions or bread crumbs.
Step 5
Bake at 350 F. for about 15 to 20 minutes depending on the size of your caps. The top will be nice and melted with a little bit of browning on the edges of the cheese.
Step 6
Let cool for about 5 minutes and then serve with your favorite main course. Or, you can eat these as the main course as my family does!
