Sweet Chickpea Fritters
Chef Dan Giusti, former head chef of Noma & founder of @Brigaid, shows us how much is possible with a can of Chickpeas & some ingenuity. He takes canned chickpeas from the mundane to something unexpectedly delicious for dessert. The best part? It'll cost you less than $2 per serving.
Note: The frozen peaches can be swapped for fresh.
The aquafaba is the liquid in the chickpea can.

Instructions
The Fritter Dough
Step 1
Drain the chickpeas, catching the aquafaba (chickpea liquid) in a bowl.
Step 2
Add the chickpeas, measured aquafaba, flour, and sugar into a food processor.
Step 3
Blend into a crumbly paste, similar to a pie dough.
Step 4
Place in the fridge to cool.
The Garnishments
Step 5
Add a touch of oil to a nonstick pan. Then add the walnuts.
Step 6
Toast the walnuts until you can smell them easily. Then take them off the heat & season with a touch of salt.
Step 7
Add the honey (the 2/3 cup in the 4 serving recipe) and water into a bowl. Heat in the microwave for 30 seconds, then whisk. Heat for another 30 seconds to bring up to the proper temperature.
The Canals
Step 8
Grab the dough from the fridge, making sure it is fully cold.
Step 9
Using two spoons of the same size, into one spoon grab an amount of dough about half the size of the spoon. Pull the dough between the curves of the spoons 3 times to make 3-sided football shaped canals (17:40 timestamp in the video)
