Instructions
Step 1
Bring a large pot of water to a rolling boil.
Step 2
Add the broccoli and boil for 7 minutes or until tender.
Step 3
Drain and return to the pot, reserving one or two broccoli florets for garnish.
Step 4
Add the sour cream and coriander seeds.
Step 5
Puree with a stick blender (or potato masher) until smooth, drizzling in the oil to achieve your desired consistency.
Step 6
Let sit for 5 minutes, then blend again for 1 minute.
Step 7
Reheat gently if needed, season to taste, garnish with reserved florets and coriander leaves and serve warm.
