Instructions

Step 1
Cut the top off your garlic and place it along with all vegetables on baking dish and into the oven for 30 minutes at 400F (skin should start to char and become easy to peel) or you can place all the vegetables and garlic in a bbq grill and allow them to cook until charred and peelable.
Step 2
Remove veggies and place into a large bowl with ice to cool off quickly so you can peel. Another hack is to place them into a plastic bag and allow them to sweat in there for the skin to peel easier.
Step 3
Peel off all the skin from the peppers and tomatoes and squeeze out all the garlic into a pan with 3 tablespoons olive oil.
Step 4
Cook on medium heat for about 15- 20 minutes or until all the liquid from the tomatoes evaporates and you’re left with a thick paste of tomatoes and bell peppers.
Step 5
Add salt and pepper to your taste preference and if you like it spicy add as much cayenne pepper and chilli flakes as you like until desired taste.
Step 6
Plate hot with olive oil drizzle on top.

Enjoy with a warm baguette
