Ingredients
8 servings
½ cupunsalted butter
1yellow onion
chopped
1red bell
pepperchopped
0.5 poundsbutton mushrooms
sliced
4cloves garlic
minced
½ teaspoonchili powder
¼ teaspooncayenne
1 teaspoonsalt
1 teaspoonpepper
1 cupflour
3 ½ cupschicken stock
½ cupheavy cream
3jalapeños
roasted, peeled and diced
10 OzCan Rotel tomatoes
18corn tortillas
1chicken
poached, skin removed and meat shredded
1 cupJack cheese
shredded
1 cupcheddar cheese shredded
Instructions
Step 1
Melt butter and saute veggies until softened. Add garlic and cook for 30 seconds. Add spices and cook for 1 minute.
Step 2
Add flour a little at a time and cook until white is no longer visible. Whisk in 3 cups of stock a little at a time until thickened. Whisk in cream and add Chile's and tomatoes.
Step 3
Preheat oven to 350 degrees. Grease baking dish. Soak tortillas in 1/2 cup of stock. Line the bottom of the dish with tortillas, making sure they overlap. Cover with half the sauce then half the chicken. Sprinkle with 1/3 of cheese. Add second layer of tortillas, sauce and chicken and 1/3 of cheese. Layer top with remaining tortillas and cheese.
Step 4
Bake for 1 hour and let stand for 10 minutes. Serve.
