Melt the butter and let it cool.

Take a bowl and put the breadcrumbs, saffron and grated parmesan in it. Mix with a spatula for few seconds.

Pour the melted butter and mix. When is absorbed add the egg and mix with a spatula. Keep mixing until the liquids are absorbed

Take your dough and move it to a flat wooden surface and work in it for a for a minute with your hands. Once you are done, let the gnocchi rest for at least half an hour.
For the sauce

Mince the shallot.

Clean the cauliflower and slice it it small pieces.

Pour some olive oil into a pan and when is warm add the shallot, the cauliflower, the heavy cream and a spoon or two of water, just enough to almost cover the vegetables. Add a bit of salt and pepper too and then mix and cook for about 10 minutes.

While the cream is getting ready, pan fry the shrimps. Keep them warm.

While the cream is getting ready, start preparing the gnocchi e and boil them in hot salty water until they come up on the surface. It should take only few minutes, then strain them. Keep them warm.

When the cauliflower is soft, switch off the stove and put everything in a food processor. Mix for few seconds, just to have a rough cream.

Take a plate, ease down the sauce first and then both the gnocchi and the shrimps.
