Step 1
Preheat the oven to 175 degrees celsius and line a loaf pan with baking paper.
Step 2
Melt the coconut oil and almond butter together in a medium-large size mixing bowl. Microwave in 30 second increments and stir until well combined.
Step 3
Add the pumpkin purée and vanilla extract to the bowl, stir until combined.
Step 4
Add the eggs and stir until smooth.
Step 5
Add all the dry ingredients to the bowl and mix until well combined.
Step 6
Pour into the lined loaf pan and bake for 35 minutes
Step 7
Remove from the oven and cover with foil to prevent the top from burning.
Step 8
Cook for a further 10 minutes or until a toothpick/skewer inserted to the centre of the loaf comes out clean. Approx 45 minutes total.
